Nominated by the wonderful Heather, the founder of The Chocolate Dispensary in Santa Monica is a former opera singer and the former owner of a high-end taste experience which led to hear extensive knowledge about chocolate! (Coincidentally, and unrelated to this wonderful person, I was recently listening to an episode of the Possible podcast, and they were interviewing a gentleman who is also an expert on flavor and chocolate.
